Food In the Marche, each small area has its own distinctive culinary specialities. Meal-times are sacred, and food is prepared with the utmost care and attention. It is very traditional with the cultivation of produce such as truffles, salami, lentils and pecorino (sheep’s milk cheese). Other locally-made cheeses include ricotta and fossa cheese. The latter is left to season for months in trenches dug in the local tufa rocks (as was done in the war when peasants used to hide their food to keep it safe from soldiers’ raids). Served with jam or the sweet local honey, fossa cheese is a real delight.
A must-try is the local delicacy vincisgrassi, a type of lasagna which is often made up of 15 layers of pasta. In the winter, polenta decorated with spicy sausage, ragu sauce or minced lamb is often eaten on a large wooden slab on the table. All you need is a fork and a big appetite! Another speciality is spiced porchetta (roast pork), stuffed with fennel, rosemary and garlic. Cooked over a log fire or crispy and caramelised between two chunks of crusty bread it really melts in your mouth. Ciabuscolo is a famous salami from Visso and Macerata, which is excellent spread on slices of home-baked bread for a picnic. WINE fgfgfgf The main vineyards of the Marche lie on the gentle rolling hills that slope down from the Apennines to the sea. The sweet grapes produce mainly white wines with plenty of body and a clear taste – the most famous being the Verdicchio, a delicate grape grown in a limited area at the foot of the Mount Sibillini. Two of the most popular red wines in the Marche are the Rosso Piceno with a full, aromatic flavour and the Rosso Conero, a full-bodied, dry wine produced in the protected area of Monte Conero. There are also many distilled wines, including the famous aniseed liqueurs (Mistrà and Anisetta) and the fine single-grape varieties of grappa. Along with various varieties of Vin Cotto and Vin Santo, there are several wild-plum flavoured wines such as the Tristo di Montesecco and the Vernaccia di Pergola. With low prices and excellent flavour, the Marche’s gastronomy is one of Italy’s hidden treasures.
